CRUNCH started in 2014 as a single late-night chicken window with one fryer and one recipe. The recipe hasn't changed. Everything else has.

How it started

A late-night chicken window.

Maya Torres was working the closing shift at a diner in 2013 when she noticed the same crowd coming in after midnight — line cooks, nurses, bartenders, cab drivers — looking for something hot, fast, and cheap.

She leased a tiny storefront on East 14th, installed one commercial fryer, and opened in March 2014. The menu was six items: 3-piece chicken, fries, biscuit, a drink, and a coffee. The chicken was brined 24 hours in buttermilk and a spice blend she'd been working on for two years.

The first weekend, the line wrapped the block. The second weekend, it wrapped twice. By the end of the first month she'd hired four people and was running out of chicken every night. Ten years later, there are fourteen locations. The recipe hasn't changed.

What we do

Six things we don't compromise on.

01

Fresh, never frozen

Chicken arrives fresh from regional suppliers every morning. We brine it for 24 hours in buttermilk and 11 spices, then bread it by hand. Nothing is pre-frozen, nothing is reheated.

Fried to order

We don't hold chicken under heat lamps. When you order, we drop it. It takes 8–10 minutes. You wait that long because it's worth it.

Burgers pressed to order

Patties are formed from fresh ground beef every morning. We press them on the flat-top when you order — never pre-cooked, never microwaved.

Buns toasted on the flat-top

Every bun gets toasted on the flat-top in beef tallow. It's a small thing. It makes the burger.

Open late, every night

We started as a late-night chicken window. We're still that. Most locations are open till 02:00 weekdays, 03:00 weekends. The late-night menu is the same as the daytime menu — no shortcuts.

No freezers in the kitchen

Walk-in coolers, yes. Freezers, no. If we can't make it fresh, we don't sell it. This is why the menu is short.

Ten years in

The timeline.

2014

First window opens

Founder Maya Torres opens a single late-night chicken window on East 14th with one fryer, one recipe, and a hand-painted sign. The line wraps the block the first weekend.

2016

Second location

Uptown opens. Same recipe, same 24-hour brine, same flat-top buns. Maya personally trains every cook for the first three years.

2018

The Crunch Burger

Double patty, triple cheese, house sauce. Added to the menu after customers kept asking for a burger to go with their chicken. Becomes the #1 seller within six months.

2020

Drive-thru at every store

Drive-thru lanes added to all open locations. Late-night hours extended to 03:00 on weekends. Delivery partnerships begin.

2022

10 locations

Tenth store opens at Harbor Point. CRUNCH Rewards app launches — 100 points = free combo. 50,000 sign-ups in the first month.

2024

14 locations, same recipe

Fourteen stores nationwide. Still no freezers, no heat lamps, no microwaves. The recipe hasn't changed since 2014.
